Yes! Today still in the capital of Scandinavia I discover Mango Cheese cake as it was the first time for me and I love it!

Miss Lopez cooking summer tips: a different Spanish gazpacho!
Try new ways of having gazpacho! Why not a Spanish gazpacho by Miss Lopez? Perfect for the summer! I love it easy! Let´s do it!
This is a different gazpacho…why not!
You need two cans piquillo peppers, one of soft cheese and a liter of chicken soup.
So…
1. Grind peppers, cheese and broth. Strain and season.
2. Boil the mixture for a second and serve with slices of Parmesan cheese.
3. Another side dish: grilled shrimp. Why not?

Salmon & cod for Christmas “a la Spanish”
Salmon for two…Romantic!
ingredients:
1 brick of cream of lobster and crayfish
Golden Delicious apples ½
Pinch of cinnamon
Smoked cod
200 gr. Fresh salmon tartar
1 tablespoon salmon roe
1 tablespoon chopped capers
1 tablespoon chopped dill
1 tablespoon chopped Escalonia
1 teaspoon chopped chives
Flora Margarine Gourmet
Preparing for the cream:
Cut the apple into cubes. Saute the diced apples in a saucepan with a little margarine and cinnamon until tender. Once cooked apples add cream and bring to a boil, cook for a moment, with the help of a blender grind and set aside.
Prepare the garnish:
Prepare the salmon tartare mixing capers, gherkins and shallots.
Roll the cod tartar forming some rolls. Serve in soup bowl add the cream and chives.Garnish with salmon roe.

Hi! Look what I have found out! In the Enrica (Study of Nutrition and Cardiovascular Risk), conducted between 2008 and 2010 on a sample of 12,000 people:

Here a delicious Sopa de pescado, fish sopa for Christmas! & Enjoy! with a touch from the Vasque country in Spain!
NGREDIENTS:
0.5 dl olive oil, 1 onion julienne, sliced ??1 leek, 1 carrot, sliced ??7 tablespoons of tomato sauce, 2 cloves garlic, rolling, 1 jet of brandy, 100 g of bread, 1 tablespoon paprika rasa.
For the garnish:
0.5 kg of peeled prawns, 1 handful of clams, 1 tablespoon olive oil, flaked fish
To 2 liters of broth:
Shells peeled prawns, 0.5 kg of chopped monkfish head, 0.5 kg head of hake, 2 l of water, 2 tablespoons olive oil, a dash of white wine.
PREPARATION:
Poach in olive oil monkfish heads and shells of shrimp. Season, pour the water, a dash of white wine and cook over low heat 40 minutes. Strain and reserve. Rescuing the meatheads.
Poach in a pan with oil, onion, garlic, chopped leeks and carrots. Add tomato sauce, stale bread, paprika and brandy. Salt to taste. Moisten with broth and cook for 30 minutes.Blend the soup.
In a skillet with olive oil, saute and add shrimp tails. In the same pan with a drop more oil, add the clams open and incorporate. Add flaked fish. Serve very hot.

and for dinner tonight: Chicken a la orange!
So now waiting to have something to eat for dinner…Pollo a la naranja or should I say Chicken a la orange. Tasty! Here it comes!
For 6-8 people
Ingredients:
6 potatoes
3 leeks
salt and freshly ground black pepper
2 oranges, peeled and thinly sliced
1.4 kg of chopped chicken (skinless thighs better bones)
1 splash of olive oil
3-4 sprigs of rosemary or thyme
75 ml of orange juice
100 ml chicken stock
preparation:
Preheat oven to 180 ° C. Peel the potatoes and cut into pieces of 2.5 cm. Cut the ends of the leeks, chop them into pieces and clean it under running water. Mix the potatoes and leeks and put everything on a plate that can be put in the oven. Sprinkle over some salt and some freshly ground pepper. Divide the orange slices over and above it, the chicken pieces. Drizzle with olive oil and salt and pepper again. Top with the sprigs of rosemary or thyme and sprinkle with orange juice and broth. Bake about 75 minutes.
Very South European I must say. i think it´s quite popular this dish in France and Spain. Well whereever you´re now try it & Feelgood!
